I don’t know if you’ve picked up on this yet or not, but – I absolutely LOVE making all kind of soups, stews and chilis in the cold weather months! Seriously. There is no better way to eat during the cooler weather, in my opinion. The recipes are easy, super cost-effective, hearty and delicious – AND most of them freeze really well, so they are perfect for making in large batches to save for future quick and easy meals. Here’s another favorite of ours to add to your arsenal – a delicious and hearty black bean soup, flavored with cilantro and a touch of lime. Mmmm…..I’m getting hungry just thinking about it!!
Whip up a big batch of this and serve with some chips and salsa to warm up any cold night!
Easy Black Bean Soup
Prepare brown rice according to package directions and set aside. Heat oil in skillet over medium-high heat. Sauté garlic and onions until they are a translucent golden brown color, around 10 minutes. Stir in cumin, cilantro, beans, tomatoes and broth. Bring to a simmer and cook for about 15 minutes. Remove 3 cups of soup from the pot and purée with cornstarch in a blender. Return puréed soup to pot and cook another 1-2 minutes to allow soup to thicken. Stir in rice, lime juice and season with salt and pepper to taste. Serve topped with some fresh cilantro, sour cream, shredded cheese or your favorite salsa, alongside some good tortilla chips.
